What a find! We were passing through Laurel, read the reviews, and decided to give it a try.  Everything was wonderful: the salsa and chips, the chili verde dinner, the fraiche (2 perfectly cooked, high quality pork chops in a yummy cream gravy) even the refried beans. I enjoyed the local clientele, families and people of all ages. Mabel was hospitable, and the cook (her husband?) could be heard singing from the kitchen. We'll be back next summer. In the meantime I have to think about whether to get the yummy fraiche again or go with cook's choice: tell them what meat you want and how hot and let the cook decide. Really glad we got into Laurel, away from the chains. Appreciated that the menu was not huge....they're not trying to do EVERYTHING here, just make sure what they serve is tops.

And as for authenticity, I don't think they cook to some narrowly defined, ever constant idea of "authentic. " I don't think such a thing even exists. All cooks make salsa differently, just as they all make spaghetti differently.   These people are indeed Mexican (thus, it's Mexican food) and they cook wonderful food that they and their customers enjoy, using the full range of ingredients, flavors and recipes. To compare them to the food you learned to make somewhere else from someone else's mom, or the tacos you had at a particular bar in puerto Vallarta is just as unfair as going to someone's house for dinner and complaining because they don't make meatloaf the same way as your mom.  These people are cooking with love and soul!
